Cajun salmon fillets with mango salsa

Juicy mango and crispy fish are a mixture straight from paradise. Spiced like this, the first bite transports us straight to the Caribbean beach.

INGREDIENTS FOR THE SALMON FILLETS

Ingredients (4 servings)
4 salmon fillets (160-180 g each)
1 tablespoon(s) olive oil
80 g butter
lime wedges to serve

INGREDIENTS FOR THE CAJUN SPICE MIX

Ingredients (4 servings)
1 teaspoon(s) sea salt, fine
1/2 teaspoon(s) black pepper
1 tablespoon(s) paprika, smoked
1 teaspoon(s) oregano, dried
1 teaspoon(s) garlic powder
1 teaspoon(s) onion powder
1/2 teaspoon(s) cayenne pepper

INGREDIENTS FOR THE MANGO SALSA

Ingredients (4 servings)
2 mangoes, ripe, diced
1 small red onion, nicely chopped
1 bunch coriander, roughly chopped
juice of 1 lime
1/2 red bell pepper, finely diced
1 teaspoon(s) chilli flakes
2 tablespoon(s) fish sauce
salt
pepper
  • Mix all the ingredients for the seasoning mix. Coat the salmon fillets evenly with oil and rub all over with the spice mixture. Set aside and prepare the salsa.
  • For the salsa, mix the mango cubes, red onion, coriander, lime juice, red bell pepper and chilli flakes in a bowl. Season to taste with salt and pepper and set aside.
  • In a cast iron pan, heat the butter and a tablespoon of olive oil over a medium-high heat. Fry the salmon fillets for 3 to 4 minutes on each side until they have a nice crust.
  • Serve the salmon fillets immediately garnished with the mango salsa and with lime wedges to drizzle over the top.
