Tasting Notes
A rather shy nose only reveals hints of wet chalk. More air reveals hints of hay and hay flowers, later on salty rye bread and parmesan rind. The palate is slender and there is something compact about that body: everything is there, concentration, depth and total finesse. This is mature now, and much happens in this defined, delineated space. The mousse is so fine, and the bubbles burst into white mushroom duxelles, salty shortcrust, preserved lemon. It is like training a microscope onto a tiny drop and seeing whole worlds open up. This is intensity presented as elegance.
