Tasting Notes
An animatingly fruity fragrance. First, multi-layered cherry, a breath of caramel, sour cherry juice, and tobacco, then becoming spicier with blackberry leaves, bay leaf, almond, and juniper. On the palate, it is very elegant and juicy, radiantly fresh and exciting, with brilliant acidity, very fine tannin, and finally, with a mineral taper to the finish, excellent length. The finesse typical of Champagne with red wine weight. Incredibly delicate - and unique. pH between 3.5 and 3.6. Twenty percent aged in amphora, and 40 percent each in new and used wooden barrels.
