Tasting Notes
Notes of spontaneous fermentation and a first patina of ripeness result in an aroma that is largely free of fruit. Some rust and grated apple. In the mouth, the wine opens with a dynamic mousse, it is puristically dry and builds up a lot of tension with its acidity, but in the background there is also a smooth base, which is also rich in Pinot aromas. The flint wine finishes much more Pinot fruity than the aroma would suggest.
