How to make your own watermelon granita.

Watermelon Granita

Refreshingly fruity – especially on hot summer days, a watermelon granita can improve your day.

Ingredients (6 servings)
800 g ripe watermelon, without seeds, cut into cubes
90 g granulated sugar
1 tablespoon(s) lemon juice
1 pinch(es) salt
  • Purée all ingredients in a blender until smooth, pour into a suitable metal or enamel mould and freeze.
  • After 1 hour remove from the freezer and roughly mix through with a fork. Freeze for a further 2 hours, then scrape through vigorously with the tines of a fork to make icy flakes. Cover with foil and freeze until required. Up to this point, the recipe can be prepared up to 3 days in advance.
  • Before serving, scrape again vigorously to obtain even crystals and pour into chilled glasses.
