Actually, they are simply fried eggs and pesto on bread, but 'pesto eggs' sounds much more exciting. They certainly taste delicious, otherwise they wouldn't have become a food trend.
The ingredients for 2 portions of Pesto Eggs:
- 4 tablespoons of your favourite pesto (bought or homemade).
- 2-4 slices of your favourite bread (from your favourite bakery or homemade)
- 4 eggs
Preparation:
- Heat the pesto briefly in a large non-stick frying pan over a medium heat.
- Crack the eggs into it and cook until they are fried.
- Meanwhile, toast the bread and arrange on plates.
- Place the pesto fried eggs on top of the toast and enjoy!
