Champagne Salon; this is not only a promising, sonorous name. It is a legend and icon of Champagne, and a house for superlatives. Not because of size, but because of the exact opposite; everything here is so small and manageable that one could actually think of it as a "salon" for Champagne. In reality however, the name goes back to that of the founder - Aimé Salon. In 1911 he purchased a parcel of land in the legendary location of "Le Mesnil" in the Cote de Blanc in order to be able to pour the best possible Champagne for his relatives and guests. In 1921 he put his Champagne production on a commercial footing and that's where the superlatives begin. Because nothing has changed until today. The grapes, naturally of the Chardonnay variety, still come from exactly that hectare of vineyard from the founding period. Exactly one single Champagne is produced, a "Blanc de Blancs Brut" with vintage - but exclusively only in outstanding vintages. For example, in the 20th century only 37 vintages were produced. This Champagne may age depending upon character for up to 8 years and more in the bottle on the yeast, before it comes on to the market. Between 30,000 to about 50,000 bottles can be sold by allocation and nowhere near enough to satisfy the immense demand for this so very special and outstanding Champagne. Surely it comes then in a quite enjoyable state to the table, but in fact it can still mature in the cellar for many years and will delight its proud owners for decades. And even if the house belongs to Laurent Perrier together with its neighbour Delamotte, Salon has remained consistently true to its original line and will continue to do so.
